When he lost his father three years later, Antonio suddenly found himself responsible for supporting his family. He made the decision to move to Buenos Aires, where he soon met Alba, the woman who would become his wife and lifelong partner. They worked tirelessly together for many years, holding as many as three jobs at a time, motivated by the dream of building a future of their own. They got that a taste of that when, alongside a business partner, they opened a bakery in the neighbourhood of La Boca. Close to the port, the bakery was in a lively area and constantly busy. But Antonio and Alba continued to dream of owning a bakery that was theirs alone. When they came across Panadería Artiaga, this dream started to finally to take shape. Initially, people warned them against the purchase, as the bakery was in a small neighbourhood and had far less activity than the bustling streets of La Boca. However, guided by their instincts, the couple made the courageous decision to proceed, and in the process shaped the future of their family for generations. Panadería Artiaga had opened its doors in 1931. Owned for many years by the Artiaga Family, the bakery offered only bread, biscuits, and croissants (medialunas) when Antonio and Alba fell in love with it and took it over. Through a lot of hard work and excellent customer service, the small bakery began to grow, and new products were soon introduced, including pastries, cakes, and then chocolates. Today, these products remain staples of a family business that has been running for years, and with the third generation of Jose Antonio, Juan Manuel, and Marisol, now contributing to its vision, Artiaga remains as dedicated as ever to serving quality baked goods to the people of Buenos Aires and beyond. For almost all of its customers, it has been around their entire lives, and the bakery has even been known to serve families across multiple generations. Sometimes, it will prepare a cake for a child’s baptism, before being part of their 15th birthday years later. Later still, it might provide tasty treats for their wedding. Then, one day, that customer returns with a child of their own. And so the cycle continues, as it has for decades. This also means that Artiaga stands for something incredibly special in the eyes of the team here, who are very much aware that they no longer just make food, they are also making memories. Generations of customers are served by generations of the family behind the bakery, and the importance of this is certainly not lost on Marisol, who is an integral part of the latest generation to take the reins of this legacy. Growing up in Artiaga, this location is so much more than a bakery for Marisol. It is home. She started working here at the age of 14, initially on the weekends. This was where she did her learning, made mistakes, and ultimately laid the foundation for the person she is today. Continuing to work at Artiaga as she completed a degree in marketing, Marisol’s role today sees her make sure that every detail reflects the brand and what it stands for. That covers everything from the packaging of its baked goods to the design of the store and the way it communicates with its customers. But Marisol’s role is also about people, and she channels Artiaga’s belief that a strong brand can only be built by strong people. The bakery constantly invests in training and supporting its team, with meetings held weekly to share ideas, discuss challenges, and help the team to make decisions with confidence. Marisol told us: “We trust them, and give them the tools, confidence, and knowledge they need to reach their full potential.” The aim for Artiaga is to have leaders within the company who started their journey with it at the very bottom, before learning the craft, embracing its values, and growing into leaders and brand ambassadors over time. After all, when its people grow, Artiaga grows as well, and this has been a common theme throughout the bakery’s storied history. It is thanks to these initiatives that Artiaga has built a team of 60, all united around the values of hard work, consistency, and teamwork, as well as its clear vision of what the brand is and where it wants to go. There is no secret recipe behind success in an industry as competitive as this, and the excellence this bakery stands for is not something achieved once (although it does have numerous prizes in international baking competitions), it means showing up every single day with the exact same commitment. “Every loaf of bread, every medialuna, and every panettone represents the work of dozens of individuals who care deeply about what we do.” Crucially, excellence at Artiaga does not mean perfection. Making mistakes is part of the work, and Marisol believes that if you are afraid to make mistakes, then you will stop trying new things. And if you stop trying new things, then you stop learning. A great example of this evolution and how Artiaga turns it into innovation came a few years before the pandemic, when it really started pushing transparency by showing customers what happens behind the scenes. This included sharing videos of its processes and explaining why it uses certified organic and agroecological ingredients. When lockdown happened and people began to take up baking and assess more deeply how food was made, they become more curious and demanding about the products they bought from stores. Since Artiaga had already demonstrated that it stood for the highest standards in the baking industry, it aligned with what customers wanted. Of course, given its esteemed history, there is a weight that comes with every innovation or decision made within this traditional Argentine bakery, which is very aware of the legacy that rests on its shoulders. By then, the team is expected to be close to 100, which is a slightly scary prospect, but certainly a welcome challenge for Marisol and co. The team never expected Artiaga to grow this much, and there is always the risk with expansion that it will cause a brand to lose its identity. Given the essence of this heritage family bakery is rooted in its history, this is simply not an option for the team, who strive to preserve the quality and values of the brand. Regardless of if they have one store or three, great products and enduring customer relationships remain at the heart of Artiaga, which inches ever closer to the 100th anniversary of its first-ever location. As this massive milestone looms, Artiaga is more aware than ever of the massive privilege that it has in touching the lives of so many across multiple generations through the products its organic bakery creates. The hope is for the next generation of the Rodríguez Family to take up the mantle and continue the legacy of Artiaga that will be passed on to them. However, Artiaga can only go on if it is operated with the same respect for the craft that has governed this traditional Argentine bakery since before Antonio took it over. “We want to continue improving, learning, investing in our people, and respecting our craft”, Marisol commented, “and hopefully, one day, see a new generation continue this story. Outside influences began to creep in, and with them a range of new opportunities. The world of food and beverages was no different, with J-Delikát Kft (trading as Kapucziner) taking inspiration from both the coffee factories in Hamburg and the rich history of Austria’s coffee culture before the Soviet Union through its store in Győr. Opening its doors in the mid-1990s, the location has been roasting specialty coffees now for more than 30 years. Specifically, this roasting is done by the Kapucziner Handcrafted Coffee Roaster, which is complemented by the 12kg of Probat coffee-roasting equipment the shop has at its disposal.
