To complement these delicious beverages is a selection of terroir-inspired, locally grown foods served in the beautifully appointed tasting room, which is situated in the midst of the vineyard. With the vineyard in view, you will see the result of the DANCIN team continually assessing the status and requirements of each grapevine throughout the growing season as they tailor their activities accordingly. This is undertaken with the goal of producing healthy fruit with smaller berries and concentrated clusters for the winery, as the team knows that this will result in reduced intervention by the winemaking team. The vineyard’s wine grapes are hand-sorted up to three separate times on the morning of harvest; once in the field while picking, once on an inclined sorting table feeding the de-stemmer, and once again, if necessary, as de-stemmed individual berries passing over a grated, vibrating sorting table that sifts out any green berries, raisins, or other undesirable material. The fruit is then allowed to cold soak for up to seven days while the native yeast fermentation slowly begins. The result is the fresh and flavoursome wines that DANCIN Vineyards has become renowned for. Guests return time and again to sample these refreshing wines, alongside the delicious dishes and glorious views. Moving forward, as the wine and culinary experience market becomes increasingly competitive, DANCIN Vineyards understands that it must enhance its service offering in order to remain successful. As such, looking ahead the team is planning a selection of exciting renovations and enhancements in order to elevate the guest experience.
