Currently, the vegan industry is relatively small and not performing as well as it could, and Maïlys believes this is because meaningful change takes time. At BIG sister, nothing is overtly perceptible and Maïlys says that most people wouldn’t immediately realise that the café is fully vegan, and that it strictly controls its energy consumption, or that it is even entirely zero food waste.
