We caught up with Sal Lo Piccolo who provided us with a detailed insight into how the Kannoli Kraze went from a hobby to a delicious business venture. As a food truck in late 2013, Sal Lo Piccolo and friends started Kannoli Kraze as a hobby to make a little extra money. However, as both the concept and the brand grew, the group wanted to see what it would be like to start a retail shop. Fast-forward a few years, not only do Kannoli Kraze have a retail shop, but they have also created a service-based business with their Cannoli Truck and Kisok stands. Both of which get hired for Private parties, Corp events, weddings, birthdays etc. The team fill and design fresh cannoli onsite for guests to enjoy for all types of events. Sal begins by going into detail about what the mobile services means for customers. “By having the Cannoli Truck, customers will no longer have to stop by at a local bakery to pick up cannoli for their guests. It is a different kind of service and it is a lot of fun. In addition to this, we are also trying to expand to an online presence as well for ordering and gifting.” When discussing their overall mission, Sal highlights how the firm are changing consumers perceptions on where they can purchase good, fresh cannoli. “Here at Kannoli Kraze, our mission in the long run is to make cannoli more readily available for the public by creating unique packaging and products that can be sold in major retail, amusement parks, movie theatres etc. Most people when they think of cannoli assume that they have to go to the bakery, which is true.
