LUX - November 2017 29 Fine-dining Alpine Tapas Menu by Yves Camdeborde Available at the M de Megève around the world, as the pioneer and founder of this combination between bistro cuisine and gastronomy: Bistronomie Chef Camdeborde commented on his new appointment and the reasons behind his passion for Tapas. “I come from the Pyrenées. I love the mountains just as much during the summer as in the winter, and Megève is a place that I hold particularly dear. I am thrilled to have this opportunity to create an original tapas menu for the stunning ‘M’ hotel. Why tapas? Tapas, for me, are the cousins of French hors-d’oeuvre. They are smaller in terms of portions, but are just as gastronomic while being explosive, surprising, different and delicious! “I always felt that lighter food options were lacking during ski trips, especially ones that could be shared. Tapas remind us of a sharing culture, which automatically feels friendly. We picture ourselves choosing from a wide range of options, while sitting with friends and family around the fireplace.” The Bureau d’Etude Gastronomique and the Buildinvest Group, owner of the M de Megève, decided to invite the renowned chef Yves Camdeborde to create a luxury tapas menu for the M’s clients, in a collaboration that will marry talent, prestige and gastronomy with a love of the mountains. Chef Yves Camdeborde is known as one of the founding fathers of the famous French ‘bistronomie’ movement, exemplified by the menu at his hotel-restaurant in Paris, the award winning Relais Saint Germain. He accepted the invitation to the Alps from Sébastien Ripari, owner of the Bureau d’Etude Gastronomique, as an opportunity to share his creativity, his expertise and his passion for gastronomy and has consequently created a fine-dining Alpine tapas menu for the hotel. Originally from Béarn, in the Pyrenées, Yves Camdeborde started out in incredibly prestigious kitchens, including the Ritz and la Tour d’Argent. He also worked at the famous Crillon in Paris under the leadership of chef Christian Constant. His cuisine is very personal. He uses high-quality ingredients in sophisticated yet approachable dishes. His wish is to offer everyone the possibility of tasting French gastronomy in an atmosphere that represents him: friendly and welcoming. He opened his first restaurant in 1992, La Régalade in Paris’ 14th arrondissement. For over 10 years, he offered his guests traditional yet inventive local dishes. Today, he is now the owner of the restaurant Le Comptoir in the heart of Saint Germain des Près in Paris, at the Carrefour de l’Odéon. Yves Camdeborde is a recognised public figure, particularly thanks to his appearance on national TV channels like TF1, France Télévisons, M6, LCI… Passionate about Literature, he has published over ten cook books. He is now considered, in France and This winter, from December 2017 to April 2018, sought after chef Yves Camdeborde will hold the residency at leading French Alpine hotel: the 5-star, Small Luxury Hotel ‘’M de Megève’’. “He uses high- quality ingredients in sophisticated yet approachable dishes.
