Here, we speak to Founder of WBO, Stephanie Chan, to find out a bit more about the success of the business. Stephanie Chan, an experienced restauranteur who has owned 2 fine Peranakan restaurants and a casual dining café downtown Kuala Lumpur. With previous experiences in the food service industry, she decided to take the business in a new direction. WBO is a spacious eatery with a tall ceiling, pristine white brick walls, and modern lighting, providing the perfect setting for a leisurely lunch and a romantic dinner setting. Based in a two-storey premises in the suburban neighbourhood of Bandar Bukit Raja, the company offers a full menu of innovative sourdough-based dishes. The company cultured and grew their own natural, nutrition-rich sourdough starter from a blend of a decades-old European starter, which she inherited from a British baker and a much younger starter cultivated in Malaysia. Chef-Owner, Stephanie develops and engineers the restaurant menu. WBO is known for its sourdough fresh pasta, made with the unique starter mixed with double zero flour imported from Italy, hand-kneaded and shaped into long or thick ribbon pasta. Another signature dish on the menu is the Gambas al Ajillo, fresh tiger prawns in olive oil, crispy garlic and chilli flakes. Not to miss out their Pani Puri, an Indian street snack, which is made using the original crispy fried puff pastry balls, stuffed with fresh avocado and sour cream rather than chutney to give them a European twist, then topped with Japanese Caviar. Almost all dishes on the menu are served with WBO’s wood-fired sourdough bread, which has distinct smoky and nutty flavours. For those who want sourdough to be the main event of their meal, the menu also features toast served with a choice of eggs, garlic confit, gambas oil, kombu butter, Italian pesto or a classic herby dip. To achieve success, WBO strives to consistently serve great tasting food made with fresh produce. Stephanie is dedicated to ensuring all dishes are made to a high standard at WBO. As well as purchasing the highest quality produce for her kitchen, she regularly dines at the restaurant to monitor quality, ordering randomly from the usual ordering system so the chef prepares the meal as they would for a customer. This way, she can give the kitchen staff feedback if necessary. Another important aspect of the business’ success is the delivery of friendly and efficient service. The staff play a crucial role in the customer experience. For this reason, Stephanie aims to hire people who fit well into the company culture and are passionate about customer service and good food. “Our internal culture simply refers to great teamwork and treating each other as family,” Stephanie says on the topic. “Every employee is given the freedom to suggest creative ideas, whether it’s for new dishes, festivities, decorations or anything they feel could improve the customer experience while dining at WBO.” In recent years, many new businesses have emerged in the food and beverage scene. In a competitive industry, it is important to stand out from the crowd. Stephanie is proud to have established a unique business in Bandar Bukit Raja. She says, “I am very proud to say that we are one-of-a-kind in this suburban neighbourhood at the moment.
