The event begins with the unveiling of a whole tuna, followed by a masterful breakdown using traditional Japanese knives. Guests learn about each prized cut — otoro, chutoro, and akami — while exploring the flavours and techniques behind them. Additionally, the Viajante87 Culture Exchange series brings in chefs and bartenders from Latin America, offering an authentic showcase of their skills and traditions. Beyond crafting unique dining experiences, the Thesleff Group is also committed to responsible sourcing and environmental stewardship. At JUNO Omakase, chefs collaborate with a Portuguese family-run fishing boat that follows strict seasonal limits of just 10 to 15 fish per day, helping to preserve marine ecosystems and prevent overfishing. Ingredients that are not in season are carefully returned to the ocean to support natural replenishment. This dedication to sustainability extends beyond seafood, as the chefs also source produce from local farmers’ markets and growers, strengthening ties with smaller and local businesses.
