Rob has a 15-year marketing career behind him and Gillian has a 10-year finance career behind her. These marketing and finance skills are areas that many in the sector have pointed out as failings with some other owners. Rob and Gillian like to think that their unique skill sets, plus the great team they have built up, has led to the success of Brea to date. The team is a key attribute which Rob is keen to highlight in more detail. “As an independent restaurant, at Brea we have the luxury of knowing our team members personally and both of the owners work directly within the team on a regular basis, to ensure that every little detail and standard is adhered to. This is central to our success, as we are able to ensure that everyone on our team shares our passion, right from the start. We use personal recommendations from our current team on a regular basis when recruiting and we have a great working relationship with the local college, who train both chefs and front of house staff. “Thanks to this collaborative approach to both recruitment and the general day-to-day running of the restaurant, we have been fortunate to work with many staff who are as committed and passionate about showcasing the best that Scotland has to offer. For example, our Head Chef Stuart McPherson has worked across Europe and trained under some eminent chefs including one who had a Michelin star. His passion to produce exciting dishes, that use the finest local ingredients, is really getting us noticed.” Moving forward, Rob is confident that despite the ever increasing competition his restaurant is facing it will continue to prosper thanks to its dedication to showcasing the very best that Scotland has to offer, as he is extremely happy to conclude. “Ultimately, at Brea we are continuing to make a name for ourselves in Stirling and we are striving to be the best restaurant in the city. There may be a time that we feel that it is right to open a second Brea somewhere else in Central Scotland but we are at the very early stages with our plans.
