David provides us with a fascinating overview of how he came to develop the concept and the secrets behind its success. “Personally, myself and my Co-founder have been in the hospitality industry for many years, working predominantly with multi-national brands. From an operational point of view; the generic approach to multi-site restaurants has lost its appeal as diners look for establishment with character rather than soulless eateries where everything is the same. As such, I decided to develop a concept that would reignite our passion for delivering an incredible experience to our customer. “This starts with human capital, and once we had put a team together we then focused on the food. Terms like ‘home-made’, ‘house- made’ and ‘made to order’ are central to the ethos of Blues Bar and Grill. The provenance of our food is extremely important to us; from our 21-day aged steaks and in-house burger recipe through to our gourmet hot dogs and the ‘best ribs in Leicester’, all of our products are hand-selected. A few months into our launch we purchased our signature ‘Smoker’ and we only smoke with Jack Daniels Wood Chips - our USDA brisket takes 15 hours minimum to reach perfection. By focusing on quality food, we have been able to achieve phenomenal success and draw in a vast array of guests.” Looking ahead, the team are keen to build upon the bar’s current success and obtain another site so that they can share their Blues Bar and Grill is an innovative, laid back sports bar offering a creative approach to American dining in Leicester.
