The owners changed several times till 1927. Since then the Heinzinger Family won the place and rented it in 2016 to Denis Michael Kleinknecht a passionate chef who serves traditional Bavarian dishes with a modern twist. He uses therefore mainly seasonal and fresh ingredients from local farmers. Deer, Razorback, Badger, Wild Ducks come exclusively from the Rottbacher hunters. There´s no need to mention, that all dishes are prepared fresh without any additives and industrial foods. Today, Denis makes no compromises in quality, especially when it comes to meat. Dry aged steaks ripened to perfection in his own dry ager, self-made sausages and smoked Duckbreast are just a few examples for the wide variety of Denis´ love to serve his valued diners. This traditional culinary experience is complemented by an impressive wine list with over 60 wines, highlighted by a Riesling Grand cru and a Sylvaner Grand Cru, by a remote relative André Kleinknecht from Alsace. Using technology combined with traditional skills Denis and his team are able to create delicious dishes which are perfectly presented. They are able to tempt even the most discerning of diners with delicate plates of precisely presented, flavourful Bavarian delicacies, and as such the eatery now boasts a vast following of guests from around the world.
