LUX - Winter 2018 35 The John Burton-Race Restaurant with Rooms: A Bastion of British Hospitality Chef Patron John Burton-Race, a long-time Devon resident, is devoted to utilising the finest local produce from the surrounding regions, including decedent white carrots, luxurious Devon lobster and luscious seasonal vegetables. He is passionate about preparing memorable dishes which combine traditional recipes with modern flare to create truly remarkable meals. His staff are equally enthused, and are always happy to discuss requirements with diners or make a helpful suggestion. Over the years, he has risen up through the ranks of kitchen life. Starting as an apprentice at the Wessex Hotel in Winchester and working his way through the hierarchy kitchen brigades at restaurants such as Quaglino’s, Chewton Glen, La Sorbonne. Eventually promoted to Sous Chef for the super chef, Raymond Blanc at Le Manoir aux Quat’ Saisons. When Raymond wanted to open Le Petit Blanc, he turned to John Burton-Race to head both the restaurant and the kitchen. It was here that he won his first Michelin Star. Later, John fulfilled his lifelong dream of opening his own restaurant in Berkshire, L’Ortolan. This is where he achieved his own two Michelin Stars. He then went on to mirror this achievement in 2000 at his restaurant at the Landmark Hotel. Today, he runs John Burton-Race at the John Burton- Race Restaurant with Rooms, which, following substantial renovations, was opened to offer diners a chance to relax in stylish comfort whilst enjoying an exciting, seasonally-focused menu and innovative wine pairings. After a rich meal of traditional dishes with lavish garnishes and flavourful twists, many guests may choose to take a stroll through the hotel’s beautiful garden. This natural oasis includes one of Paignton Zoo’s Great Gorilla statues, ‘Flagged’, designed by Penny Robson. This unique sculpture is an interesting focal point in these luscious gardens. It is no surprise that many visitors choose to use this beautiful venue as the setting for their wedding or special event.
