98 Ofoods is a food and beverage operations company, which opens and manages restaurants. Recently, we profiled the firm and spoke to Osman Kavran who provides us with a detailed insight into the fine establishment. Established in 2017, Osman26, run by Ofoods, is a restaurant concept established with the goal of adding a different dimension to the daily prepared dishes. Osman26 offers its guests 15 daily-prepared lunch dishes, make your own salad, an a la carte menu and evening events with an expansive liquor and Turkish wine selections. Going into greater detail about how the firm always achieves excellence, Osman begins by informing us how the team ensure that they only deliver the best food and beverages and a guests first impression when entering the establishment. “Here at Osman26, we mainly use seasonal local produce from selected vendors. We train our personnel periodically and we hold weekly meetings to evaluate the process, explore new ideas and travel to discover new tastes. “Our restaurants’ design is parallel and assertive with its concept. When a guest first enters the restaurant, it is met by a 7x14 meter still-life painting that capture the attention of the guests. Right below the painting, daily- prepared fresh dishes are displayed. It helps activating the digestive system and working up an appetite.” Over the years, the team at Osman26 have seen numerous changes within their industry. Not only has the industry changed, but also consumers’ expectations. When discussing how the diners’ expectations have changed, Osman reveals how the firm have altered their services in order to fulfil these requirements. “In every new establishments, there should always be room for change, because in our sector the most important thing is to be able to answer our customers’ demands. We get feedbacks from our guest and we try to respond to their requests. “Also, we care to use most up-to-date equipment’s. Like most restaurants, we use a point of sales systems, which helps us monitor the whole process from stock to service.” When discussing the internal culture at Osman26, Osman is keen to highlight the approach the firm takes to hiring new team members and how they ensure that the best talent in the industry to the restaurant. “90% of our staff comprise of young people. We hire open minded and trainable personnel. In addition to this, we have a constant training program and the staff is provided with a personnel hand book, detailing information on how to represent the uniform to its fullest.” Looking ahead to what the future holds, Osman signs off by revealing the exciting plans which lie in the pipeline for the fine establishment, especially following their recent success in LUXlife’s 2018 Global Luxury Restaurant & Bar Awards where they were selected as the Most Outstanding A La Carte Menu – Istanbul. “Moving forward, we aim to standardize our operations, and may even open another restaurant with a similar concept in near future. In addition to this, we are also in the midst of planning other projects. There are many opportunities to explore.
