I run a French restaurant in Oita Prefecture, Kyushu, Japan. Using ingredients from Oita Prefecture, I draw inspiration from Japan’s four seasons and rich culture to offer a unique dining experience. My cooking emphasizes aroma, temperature, shape, color, and storytelling, embodying originality. By fusing French culinary techniques with Japanese cooking methods, I create original dishes, expressing gratitude for the environment, people, things, and events, and providing memorable experiences.
